This is a very simple store-cupboard Masala Chai recipe. It takes very little time to prepare, and uses dried spices that keep well. It’s great for when you’re feeling a bit under the weather with a cold. It can also be put into a flask to take out on a walk on a crisp winter’s day.

There are much richer recipes out there that I’d like to try and make myself at some point but they are more involved especially when using fresh ginger (the enzymes that would curdle the milk need to be boiled to denature them first).

  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • 5 cardamon pods
  • 2 cloves
  • 1 cinnamon stick
  • 2 teaspoon sugar
  • 2 teabags
  • 1/2 pint of milk
  • 1 and 1/2 pint water

The Method

  • Add the dry ingredients to the pan.
  • Then pour in the milk and water.
  • Add the lid to the pan and use a low heat to gently warm the mix until it is simmering.
  • This might take 30 minutes on a low heat.
  • Once brewed pour the chai through a tea strainer into mugs.
  • Drink and enjoy!
